I have been there. Just before actually. They had everything set up. It was packed. But it was just bad timing.

Grinchmas is a celebration with a cockeyed looking christmas tree in seuss landing.
they decorate the entire place and they have a special re-telling show of How The Grinch Stole Christmas.

They have a character meet and greet/take pictures with the Grinch for the kids. Every night they also had a tree lighting event.

Over at USF at christmas time you'll get to see Macy's Holiday Parade with balloons and floats from the Thanksgiving Day parade in NYC with Santa tailing the Parade and lighting the huge christmas tree located between Twister and the Mummy. There is also a special christmas themed Blues Brothers show as well as a Barney's and KidZone Christmas/Holiday Show.
It's a nice event for both adults and kids. I definitely recommend it to those that enjoy holiday specials and the christmas season.

Depending if you go early during the christmas season celebrations, it is not too busy. I'd say it's about an average day at both parks.
Hulk maybe 20-30 mins, not too shabby of days.

If you come the a couple days before christmas till about a week after new years, it is usually pretty busy at both parks. Expect to see the summer style crowds at parks at that point, or a tad below what that is like anyways.

Surprisingly the best part during that busy part is the week between christmas and new years. after new years, forget it, or before or on christmas, forget it
